Cooking with Susie Q – week of September 5, 2018

Well, many of you are jumping for joy these recent weeks. School is back in!   Many of us are coming up on our favorite time of year. Cool nights, warm days, Holidays headed our way.  We will all be looking for new favorite recipes to share with our family and friends. I’m looking forward to having you share your favorite desserts, side dishes, nibbles, and treats.  Please share.

I’m sharing a couple of recipes I made when my children were home.  They would grab them before sports practice, lunch bags and after school.  I tried to rotate them some so that they wouldn’t get tired of any of them.  It seemed they never did. Have a great week!

Granola Bars

2 cups rolled oats

3/4 cup packed brown sugar

1/2 cup wheat germ

3/4 teaspoon ground cinnamon

1 cup all-purpose flour

3/4 cup raisins (optional)

3/4 teaspoon salt

1/2 cup honey

1 egg, beaten

1/2 cup vegetable oil

2 teaspoons vanilla extract

Directions: Preheat the oven to 350 degrees F. Generously grease a 9×13 inch baking pan. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt.

Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan. Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

Apple Dip

1- 8 oz pkg cream cheese

1/2 cup brown sugar

1 tablespoon vanilla extract

Directions: Stir together the cream cheese, brown sugar and vanilla extract until smooth.  (yum, tastes like caramel) Apples dipped are good, any fruit would work. Might even try it on a favorite shoe.  It really is that good.
