Cooking with Susie Q    Well, wasn’t that an amazing weekend?! I wish we had another 6 months of warm, sunny weather, however, that probably isn’t going to happen. So……Apples are coming. Within the next few weeks the apples in the area are going to be ready.
    I received a letter from Edith in Hartford, CT. She was up in Island Falls recently and enjoyed the column. (I hope she checks into a subscription from us, we could use more of her recipes). Edith sent us some of her favorite apple recipes. I can’t wait to try these. I hope you enjoy them. Here goes……..

Apple Coffee Cake

Fill a 9 X 13 pan 3 / 4 full of apples (5-6 good sized apples) Mix 1 tablespoon sugar and 1 teaspoon cinnamon together-sprinkle over apples.

Topping:
2 sticks of melted butter or margarine
2 cups sugar
2 cups flour
2 beaten eggs

Directions: Mix together, spread over apples. Bake @ 350 degrees for one hour.-Edith says that 2 – 8 x 8 pans work well also. She also says she likes this even better than apple pie! That’s quite a testimonial.

 Apple Raisin Coffee Cake
1 Egg
3 / 4 cup sugar
1 / 4 cup shortening
1 / 2 cup milk
1 1 / 2 cups flour
2 tsp baking powder
1 / 2 tsp salt
1 / 2 cup raisins
2 medium apples – peeled and thinly sliced

Directions: Mix in order given. Sprinkle with topping of 1 tsp cinnamon and 2 Tbls sugar. Bake at 375 degrees 40 – 45 minutes in a 9 x 9 pan. Serve warm.

Apple Buttermilk Muffins
2 cups flour
1 / 2 cup packed light brown sugar
2 tsp baking powder
1 tsp baking soda
1 / 2 tsp salt
1 cup buttermilk
1 / 4 cup vegetable oil
2 tsp vanilla
1 large egg
2 cups diced apple
1 / 2 cups chopped walnuts (optional)
1 Tbl sugar
1 tsp cinnamon

Directions:    Preheat oven to 400 degrees. Grease 12 large muffin cups. In a large bowl combine the first 5 ingredients. Wisk wet ingredients in a small bowl, stir into flour mixture just until flour is moistened. Fold in apples and nuts. Spoon batter into muffing cups. Sprinkle with cinnamon and sugar. Bake 25 minutes. Edith gives us a caloric count of 115 calories without the walnuts.
