I know it’s a little early, but we should really be thinking about our favorite spring-time recipes.  It won’t be long before we are talking about strawberries and  rhubarb, two of my favorite spring time fruits. Won’t you look through your family cookbooks and index cards and yes, even the scraps of paper that you tucked into the back of your favorite cookbook.
    I would love to have you share the recipes that you grew up with, the ones that just the smell or taste bring back the memories of years gone by.  Thank you in advance.  I look forward to hearing from you.
This week I received a request for “whipped cream frosting”, in my search I came across a couple of others that looked too good to ignore.  I hope you have your favorite cake recipe or box mix handy.  Here they are! Thanks to Cindy for her email request.

Whipped Cream Frosting
1 (.25 ounce) package unflavored gelatin
4 teaspoons cold water
1 cup heavy whipping cream
1/4 cup confectioners’ sugar
1/2 teaspoon clear imitation vanilla extract

Directions: Mix gelatin and cold water in a small saucepan, and let the mixture stand until gelatin thickens. Cook over low heat, stirring constantly until gelatin dissolves. Remove from heat, and let cool; do not let set. Whip cream, sugar, and vanilla until slightly thickened. Continue beating slowly, while gradually adding the gelatin. Whip at high speed until stiff.

Lemonade Frosting
2 cups heavy whipping cream
2 tablespoons white sugar
3 fluid ounces frozen pink lemonade concentrate, thawed

  Directions: In a large glass, metal , or ceramic bowl beat whipping cream, sugar, and pink lemonade until fluffy and peaks form. Use immediately.

Maple Frosting
1 (8 ounce) package cream cheese
1/4 cup butter
4 cups confectioners’ sugar
1 teaspoon vanilla extract
1/2 teaspoon maple flavored extract

Directions: Cream together the cheese and butter or margarine. Stir in the confectioner’s sugar and flavorings. Mix well.
