Congratulations to the area basketball teams. Great job by all! We have such young teams in the area and will see most of them again next year. I recently received a request for Tater Tot Casserole. M says she grew up with her father’s cooking one night a week and this was one of his specialties.  Her family loved it and they haven’t had it since her father’s passing a couple of years ago.  I found this one M and I hope it brings back some memories.

Tater Tot Casserole
1 pound lean ground beef
1/2 cup chopped yellow onion
1 egg
1 (10 ounce) can cream of chicken soup
1 (32 ounce) package tater tots

  Directions: Preheat an oven to 450 degrees F (230 degrees C). Grease a 9×9-inch baking dish. Mix the ground beef, onion, and egg together in a bowl; spread evenly into the prepared baking dish. Arrange the tater tots over the beef mixture. Pour the chicken soup over the tater tots.
Bake in the preheated oven until the beef is cooked through and has reached an internal temperature of 160 degrees F,  about 1 hour.

Farmer’s Casserole
3 cups frozen hash brown potatoes
3/4 cup shredded pepperjack cheese
1 cup cooked ham, diced
1/4 cup chopped green onions
4 eggs, beaten
1 (12 fluid ounce) can evaporated milk
1/4 teaspoon ground black pepper
1/8 teaspoon salt

  Directions: Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish. Arrange hash brown potatoes evenly in the bottom of the prepared dish. Sprinkle with pepperjack cheese, ham, and green onions. In a medium bowl, mix the eggs, evaporated milk, pepper, and salt. Pour the egg mixture over the potato mixture in the dish. The dish may be covered and refrigerated at this point for several hours or overnight.
Bake for 40 to 45 minutes (or 55 to 60 minutes if made ahead and chilled) in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.
