As I write this they are predicting a few days of warmer weather. If the wind dies down, it will make a difference to me.
We have a great weekend coming up! Super Bowl! If your favorite team isn’t playing, you would rather have a movie fest or if you choose to go shopping while the sports buffs watch the game, snacks are always appreciated. I’ve included a couple of recipes we’ve received and hope you find something
you like or a new one to try. Go Team! Go Shopping! Have a great week and be thinking of something special for Valentines day. Groundhog day is coming, but up here in the north it’s a win win for us. Early spring? Or 6 more weeks of winter? Either way we win.
Buffalo Chicken Dip
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce (such as Frank’s Red Hot®)
1 1/2 cups shredded Cheddar cheese
Directions: Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly.
Jalapeno Dip
1 (4 ounce) can diced jalapeno peppers
1 cup shredded Parmesan cheese
1/2 cup shredded Cheddar cheese
1 cup mayonnaise
1 (4 ounce) can chopped green chilies
1 round loaf sourdough bread (can use casserole dish)
Directions: Preheat an oven to 350 degrees F (175 degrees C). Combine jalapeno peppers, Parmesan cheese, Cheddar cheese, mayonnaise, and green chilies in a bowl. Cut the top off of the sourdough bread and hollow out the center to create a bowl. Fill the bread bowl with the jalapeno mixture.
