I heard from a couple of readers with these recipes.  Of course in Aroostook County, we know how to do potatoes, but every once in a while a new recipe comes up I have to try. Thank you Yvonne. I also have many favorites and another one of these is snicker doodles.  Heidi shared one I haven’t tried, yet.

I am really looking forward to warmer weather.  I hope it gets here soon.

Loaded Potato Casserole
8 medium potatoes, peeled and cut into quarters
1/2 cup cream cheese
1/2 cup sour cream
1/4 cup butter
1/4 cup milk
1 teaspoon salt
1/2 teaspoon freshly ground black pepper (optional)
1 1/2 cups shredded cheddar cheese, divided
8 slices bacon, cooked, chopped, divided
1/2 bunch green onions, sliced

    Directions: Place potatoes in saucepan, and cover with salted water. Bring to a boil over med-high heat. Cook until tender, then drain well.
Preheat oven to 375° degrees F. Transfer potatoes back to the saucepan. Masher with a potato masher until almost smooth. Add cream cheese, sour cream, butter, milk, salt and pepper. Continue mashing until smooth. Stir in 1 cup of the cheese and half the bacon. Spoon mixture evenly into a lightly oiled 3-quart casserole dish. Use a spatula or fork to make an irregular surface. Bake in preheated oven for 25 minutes; sprinkle with bacon, green onions, and remaining 1/2 cup cheddar cheese. Return to oven and continue baking until cheese is melted, about 5 minutes more.

Snicker doodle Blondie Bars
1 cup butter
2 cups brown sugar
2 eggs
1 Tbsp vanilla
3 cups flour
2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp cream of tartar
1 tsp salt
1 cup butterscotch chips
Topping:
2 Tbsp sugar
1 tsp cinnamon
dash nutmeg

    Directions: Cream butter and brown sugar for 3 minutes. Add eggs and vanilla and beat till smooth. Stir in dry ingredients and chips. Lightly spray a 12 cup cupcake pan or a square 12 serving brownie pan. Roll 2 tbsp dough into balls and place on a baking sheet. Combine topping ingredients and roll dough balls in it. Place coated balls in baking pan. Bake at 325 for about 35-40 minutes.
