I think the weather is changing. It was a lot cooler this weekend, although, it will get a lot colder before long. I had a couple of suggestions this week from John and Amanda. John gave me his “Ultimate Burger.” It has all the important ingredients, bacon, cheese and beef, so, you try it and let me know what you think.
Also, Amanda gave us a recipe for Pumpkin butterscotch cookies. Yes, butterscotch. Nay, you say? No way. We made these this weekend and have decided to put it into our “cookie rotation”. With several of the offspring away, these cookies travel well and taste great. Amanda tells me that her grandmother made these for her family of nine, (yes, nine) and then over the years for the multitude of grandchildren and great grandchildren, as well. 2 or 3 slices of uncooked bacon-rough chopped
1/ 4 lb of hamburger
1/ 4 cup bleu cheese
1 metal ring-I would use an egg ring-can use plastic-you’re not cooking with it.
Directions: Rough chop your bacon and press into ring. Press cheese into ring on top of the bacon and then press hamburger into ring on top of the rest. Pack firmly. Fry in hot pan, bacon will be crisp and cheese will melt, flip and cook to desired doneness. Use bun of your choice and condiments galore. Yumm, John, Thank you!
1 12 oz can of pumpkin
2 tsp melted margarine
2 tsp baking soda
3/ 4 cup vegetable oil
2 cups sugar
2 eggs
4 cups flour
1 tsp salt
4 tsp baking powder
2 tsp pumpkin pie spice
2 tsp vanilla
1 12 oz package butterscotch chips
Directions: Combine the first 6 ingredients in a large bowl. Combine flour with salt, baking powder, and spices. Add flour mixture gradually to pumpkin mixture, add vanilla and chips. Bake at 350 degrees for 8 to 10 minutes or until light golden brown on edges.
