I hope you had a safe and happy New Year. I recently got a letter from Jeremy asking for some “party food that has meat.” He is having a Super Bowl party and his friends have let him know in advance that they don’t want “veggies and cute sandwiches.” I think I can help with this. Read on. GO FOOTBALL!

Stromboli
3 (1 pound) loaves frozen bread dough, thawed
1/2 pound thinly sliced deli ham
1/2 pound thinly sliced pepperoni
1/2 pound thinly sliced provolone cheese
1 egg yolk, beaten

  Directions: Let dough rise until doubled, according to package directions. Punch down. Roll each loaf into a 15-in. x 12-in. rectangle. Arrange a third of the salami, ham, pepperoni and provolone cheese over each rectangle
Sprinkle each with a third of the mozzarella cheese, Romano cheese, garlic powder, oregano, parsley and pepper. Roll up each rectangle jelly-roll style, beginning with a long side. Seal seams and ends. Place seam side down on two greased baking sheets. Brush with egg yolk.
Bake at 375 degrees F for 30-40 minutes or until golden brown. Let stand for 5 minutes before slicing. Serve warm. Refrigerate leftovers.

Jalapeno Popper Dip
2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
4 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

Directions: Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
Microwave on High until hot, about 3 minutes.
Baked Variation — If you would like to brown the cheese, bake at 375 degrees F for about 30 minutes. Serve with crackers or whatever you like.

Beefy Cheese Dip
1 pound ground beef
1 pound sausage
1 bunch green onions, chopped
1 (16 ounce) jar salsa
2 pounds processed cheese, chunked (velveeta works best for me)

Directions: In a large skillet, brown beef and sausage. Drain excess fat. In another large skillet, mix green onions, salsa and processed cheese over a low heat. Continue stirring until cheese melts. Add meat to the cheese mixture and simmer uncovered until ready to serve.
