Cooking with Susie Q – Week of April 13, 2020

I hope you are all faring well with the stay at home order.  I know you realize this, but it really does mean stay at home. Many of us still have to work, so please maintain social distance, wash your hands and don’t touch your face. That being said, please keep checking on those you can’t visit. 

Call, text, Skype, or Facetime. We need to be checking on each other. We need to know that everyone is OK, and they need to know that we care. Thank you.

When the kids were home and much younger, we came across a recipe that quickly became a favorite. We called it Roly Poly Chicken. I think the original recipe was for a “chicken relleno,” but kids being young and being kids, they would ask for roly poly.  Please be safe, and have a great week.

Roly Poly Chicken

4 oz Monterey Jack Cheese

4 large chicken breasts

Pickled jalapeno pepper rings

Crushed red pepper

Salt and pepper to taste

1/ 4 cup bread crumbs (seasoned or unseasoned)

1 envelope of Taco seasoning

1/ 2 flour

1 Egg

1/ 2 cup milk

Directions: Flatten chicken breasts between wax paper to 1/4-inch thickness using a meat mallet or rolling pin. Place one ring jalapeno pepper and 1 ounce cheese, add a few flakes of crushed red pepper in the center of each chicken breast.

Roll chicken lengthwise and secure with wooden skewers or toothpicks. Combine breadcrumbs, flour and taco seasoning. Combine egg and milk. Dip rolls in milk, then dredge in breadcrumb mixture to evenly coat.

Place chicken in a baking dish sprayed with nonstick cooking spray. Bake uncovered 30 minutes or until tender. Serves four.

Crispy Butter Chicken

2 eggs, beaten

1 cup crushed buttery round cracker crumbs

1/2 teaspoon onion powder

1 teaspoon lemon pepper

ground black pepper to taste

4 skinless, boneless chicken breast halves

1/4 cup butter, melted

4 cloves of garlic

Directions: Preheat the oven to 375 degrees F. Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with onion powder, lemon pepper and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat. 

Arrange coated chicken in a 9×13 inch baking dish. Pour butter over and place garlic cloves around the chicken. Bake in the preheated oven for 30 – 35 minutes, or until chicken is no longer pink and juices run clear.  You can use the butter sauce as a topping for egg noodles, making a complete meal.
