Cooking with Susie Q – Week of June 29, 2022

What a great day! We’ve gotten our garden in, flowers planted and now we wait. Summer is near and I am more than ready. Our yards may become our places of entertainment again this year.

Due to the high cost of travel, we may be spending more time at home and have people over. Manny sent this recipe and says he makes it for the Fourth of July celebration every year and his family looks for it each time. Manny says this is his mother’s recipe, but he adds broccoli, and pepperjack cheese. 

I would suggest you add your own favorites and make it your own. I’m also including a chicken salad recipe. It can be used as a side dish on lettuce or sandwiches. I love the mix of salt and sweet and crunch, so this is a great recipe. Have a great week!

Manny’s Macaroni Salad
1 cup macaroni
3/ 4 cup cubed Cheddar cheese
1 stalk celery, chopped
1 green bell pepper, chopped
1/ 2 cup frozen green peas, thawed
1/ 3 cup chopped onion
1/ 4 cup mayonnaise
1/ 4 cup sour cream
2 tablespoons milk
1 1/ 2 tablespoons sweet pickle relish

Directions: Cook pasta in boiling salted water until done. Drain. Rinse macaroni under cold water, and drain again. Combine pasta with cheese, vegetables, mayonnaise, sour cream, milk, and pickle relish. Chill for at least 24 hours.

Pecan Chicken Salad

1/ 2 cup chopped celery

1 Fuji apple – washed, cored, and chopped

1 cup red grapes, halved

1/ 2cup chopped pecans 

1/ 2 cup mayonnaise

2 cups chopped cold rotisserie or roasted chicken

3 tablespoons Thousand Island dressing

1 tablespoon minced red onion, or to taste

1/ 2 teaspoon ground ginger

1/ 4 teaspoon curry powder

1/ 4 teaspoon dry mustard

Salt and ground black pepper to taste

Directions: Combine chicken, celery, apple, grapes, and pecans in a large bowl. Combine mayonnaise, Thousand Island Dressing, onion, ginger, curry powder, and dry mustard in a small bowl. Whisk together and pour dressing over salad ingredients. Mix to combine. Season with salt and pepper
