I love cold weather. I love cold weather. I love cold weather. Nope. I didn’t work. I’m still not convinced. Now let me think. Only about 2 more months, and we will be getting ready for spring. I like these recipes for those busy, cold days.
    If you like a little heat, this recipe is fine, if you don’t, just substitute the Jalepeno peppers with sweet green pepper. If you like more spice, add more hot peppers. I make the chili in the morning in the slow cooker, go about my business with shopping, errands, housework, ball games, etc., then when you are almost ready to eat, you can make the Enchiladas to go with it.

Easy Chili
1 pound ground beef
1 cup chopped onion
1/2 cup chopped green bell pepper
2 1/2 tablespoons chili powder
1 clove garlic, minced
1 bay leaf
1/2 teaspoon ground cumin
4 teaspoons finely chopped jalapeno chile peppers
1 (29 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (16 ounce) can chili beans, undrained
salt and pepper to taste

  Directions: In a large saucepan over medium high heat, combine the ground beef, onion and bell peppers. Sauté for about 5 minutes, or until beef is browned. Drain excess fat. Add the chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper to taste. Bring to a boil and reduce heat to low. Cover and simmer for 1 1/2 hours, stirring occasionally. Stir in the beans and heat through.

Cheesy Enchiladas
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package Shredded Cheddar Cheese, divided
1/4 cup sliced green onions
6 (6 inch) flour tortilla
1 (16 ounce) jar Salsa

Directions: Beat cream cheese with electric mixer on medium speed until smooth. Add 1 cup of the cheddar cheese and onions; mix until blended. Spread 1/4 cup cheese mixture down center of each tortilla; roll up.
Place, seam-side down, in 11×7-inch baking dish. Pour salsa over tortillas. Sprinkle with remaining cheddar cheese; cover. Bake at 350 degrees F for 20 to 25 minutes or until thoroughly heated.
