Cooking with Susie Q – Week of January 19, 2022

We are in times like we’ve not experienced before the past two years. Many of you have children at home for various reasons at various times. Perhaps more days are to come.  We see new faces everywhere.  Be kind.  It’s nice to have new neighbors!

Maybe make a favorite bar, square, or pie and share.

I’m sharing a couple of recipes I made when my children were home.  They would grab them before sports practice, lunch bags and after school.  I tried to rotate them some so that they wouldn’t get tired of any of them.  It seemed they never did.  Have a great week!

Granola Bars

2 cups rolled oats

3/4 cup packed brown sugar

1/2 cup wheat germ

3/4 teaspoon ground cinnamon

1 cup all-purpose flour

3/4 cup raisins (optional)

3/4 teaspoon salt

1/2 cup honey

1 egg, beaten

1/2 cup vegetable oil

2 teaspoons vanilla extract

Directions: Preheat the oven to 350 degrees F. Generously grease a 9×13 inch baking pan. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.

Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.

 Apple Dip

1- 8 oz pkg cream cheese

1/2 cup brown sugar

1 tablespoon vanilla extract

Directions: Stir together the cream cheese, brown sugar and vanilla extract until smooth.  (yum, tastes like caramel)  Apples dipped are good, any fruit would work. Might even try it on a favorite shoe.  It really is that good.

I really enjoy this time with you each week and would love to hear from you. Do you have any requests? Is there a recipe you have been looking for or remember from your younger years?
