Wow. That’s all I have to say. What a fabulous stretch of weather. We are going to enjoy it for as long as it lasts. I checked the calendar for our next holiday and I see that the next one we have on my calendar is Bastille Day. That’s not a holiday I have off from work. Anyway, I’m always looking for a good summer salad and with the weather as warm as it has been, we do most of our cooking on the grill with cold salads on the side. Here are a couple that I received from you-the readers-and I wanted to share with you-more readers. Have a great week and remember-enjoy the summer, cooler/cold weather will be here before you know it!
1 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon salt
1/4 teaspoon ground black pepper
1 clove garlic, minced
1 1/2 tablespoons chopped fresh basil
2 cups colored rotini pasta
1 cup chopped tomatoes
1/2 cup chopped yellow bell pepper
1/2 cup sliced black olives
Directions: Cook pasta according to package directions. Rinse in cold water, and drain. In a large mixing bowl, whisk together mayonnaise, vinegar, salt, black pepper, and garlic until well blended. Mix in basil. Add pasta, tomatoes, bell peppers, and olives; fold gently until mixed. Chill several hours. Stir gently before serving.
